it hasnt even all been shown yet but the grimjow ichigo fight while in los noches will most likely go down as my favorite.. other than that ichigo vs buakuya

Ichigo vs Byakuya (when Ichigo's Hollow form takes over for like a minute)
Ichigo vs Kenpachi
Madarame Ikkaku vs Edrad Leones (Ikkaku's Bankai was awesome)
Ichigo vs Grimmjow (the first time they fought)
Soifon vs Yoruichi

Ichigo vs Kenpachi in the series, altho we are about to really get into the Ichigo vs Grimjow fight in the animie it will be nice to see how that goes....as long as they don't drag it out for 20 eps...
