Adjuchas can revert to Guillian if they don't continue eating others, and they DID say they were giving up

You're right in a way, the reason they wanted to be consumed by Grimmjow is so they wouldnt eventually revert back to the mindless Gillian. Basically they remain the same and at least experience the next level, should he reach it, through Grimmjow. It's seems quite apparent that an Espada's Fraccion can be any of and any number of hollows that Espada chooses from those he has consumed in he past. When that decision is made it seems Aizen or someone makes these hollows into the numeros class of Arrancar, obedient to their Espada.

No, that's just hypothesis, we have nothing to back it up with. Some may have had followers since before they were arrancar, but you can still only make arrancar out of present hollows.
