Hmmmm well there aren't many that can fit that description.
How about:

D.Grayman (somewhat middle aged, a lot of fantasy. Overall quite a good anime)

Claymore (in the middle age, about a race of female warriors that are half human half demon)

Fullmetal Alchemist (in middle age, less on the fantasy side, but sure theres some magic involved)

These are the ones that I've watched and liked(: You can try them out of you haven't watched them before
