I'm sure you can thank Akira toriyama for that. There were a lot of time when the good guys got their asses kicked a lot too in Dragon Ball and Dragon Ball z. Two examples from Dragon Ball are general Tao and King Piccolo.

( a lot of anime / manga have continuous good and bad moments, I can count parts of OP I didn't like on one hand, after 565 chapters I'd say thats pretty good )

( power ups are always explained, and the levels of power is clear, there is no shortcut to the top )

to be honest ... I wouldn't really name the plot in reasoning for OP's awesomeness, or at least the over all plot, you could give the same plot to many authors and they could be completely unsuccessful with it, I don't really see it as what makes OP as great as it is, seriously if not for the easily hated main characters which makes it fail, naruto is on par plot wise
