So exactly what is Amu when she character changes with Dia? And I don't mean like she's called Amulet Diamond, like what her character is.

By "what is she..." you mean like she's Athlete with Ran, Artist with Miki and Cook/cleaner/etc. with Su? I think that with Dia, it's not like that. Dia was probably born, because Amu couldn't trust herself. As Dia, Amu doesn't want to be anything, just to be able to trust herself, I think that's the reason why she doens't have a character like Ran, Miki, Su or anyother Guardian Chara does.

Isn't kinda obvious that Dia is the "musical" side of Amu? She's got the mic and everything. And she did help with Utau's singing...
